One thing that I dislike most in modern cars is that, thanks to the airbag, tons of steering wheel buttons, you can't replace the steering wheel. That's one thing I wish we could go back on doing it, but the after market is still playing catch up with modern technology (head unit replacement - even Alpine has trouble with some cars), etc.
One steering wheel that I love to watch, and I'd love to fit into my cars: the Enzo's. This one would look great on my FX (just replace those functions with vol up down, etc, LOL
)
Since I love buttons, the 08 Ferrari F1 has plenty, it would work great if I had an Atom to play with...too bad that at 50K it would cost more than the car itself though:

?? Where's the air bag? If it's not for a track day car only (but then why not the airbag?), it would fit perfectly with any 70's Nissan and that's it. Is this the best after market option there is? Poor.
I like the FX steering wheel though, but the Sequoia's too big. Can't find any decent replacement yet, maybe I can fit a Lexus?
I feel sorry for the Corvette owners. Their steering wheel suck, there's not even an indentation for the thumb, as most sport cars do. And the build quality is serioulsly lacking. This is the 100K 2009 ZR1...can you believe it?

No, they were just ugly. I never liked the interior of the first gen FX much, especially when compared to the M. Was like the original G interior, but a bit boxier and blah. Infiniti slowly started getting better with the 05 models and revisions.
And good luck finding an aftermarket steering wheel that accommodates an airbag. They're all designed as simple wheels, you're lucky if you even get a horn.
As far as setups I like, the R8. Flat bottom, well contoured, minimalist. No excessive array of buttons on it and doesn't restrict visibility to the dash.

The wheel was nice and I liked the flat bottom but the buttons weren't much use for doing things. I liked the buttons on my old M45 the best thus far. I actually used them and they worked quite well. I also think the "wild card" button on my M6 is great because you can program it to do a number of things. Bad news is, none of them are that great. Idea is good though. Also, the R8 interior was almost too minimal to me. I recall the delivery day and i got in and was thinking, hmmmm this isn't as nice as the A8. It just feels like there isn't a whole lot of substance going on there. Still, anything lacking an "I Drive" deserves a couple of pats on the back.

The simplicity is what I like about the R8 though. Too many luxury sports cars get caught up in the extraneous electrical doo-dads, buttons and gizmos that don't have any direct bearing on improving the task at hand. If it doesn't directly impact the way the car handles or performs, I don't want it in anything with the pretentions of being a sports car, call it a Gran Tourer or something.

What I would like to have, just for the fun factor, was a neutral button on the steering wheel, so that you could play with the gas pedal without the brake light dance at a stop. The custom button idea is great.

And Momo (both with airbags, the Hartge, with stereo controls too)
Much better than the Nismo offering.
I don't know why is it so difficult. The airbag is just a bag with a canister of CO2 right? The electronics are not on the steering wheel itself, you just need a wire to connect that. The stereo controls are pretty simple, you just need a service manual to understand what you need. A custom made one for the Japanese makers is lacking, finished in suede, with programmable buttons and what not would be great!

If its not a vehicle used in the sense of a DD, there isn't much need for all of it and it could go. If its a DD, then there's not much point in nitpicking. If I had a weekend only / track vehicle, I would have no qualms stripping it down to the bare essentials. When I swapped the headunit in my STI I was tempted to remove the steering wheel controls altogether, the parts are available to do it (harness blockoff, filler plate, etc...), but it was actually more expensive than to get the adapter to retain them. So I opted for low cost and convenience. And being that its my DD, the mute button is handy. I'd go aftermarket wheel, but the options for airbag are lacking, and I'm not going to remove that safety feature for the chance that I should need it one day. If I wanted to get serious with tracking the car, it'd all be ripped out in a heartbeat.
Lotus interiors are great though.
And that Momo wheel is seriously disgusting, lol.
